Halloween Funfetti Cake Balls

Halloween is one week away, but anybody who’s anybody is attending all festivities this weekend. Are you attending a pot luck function, and would like to take something easy, yummy and cheap that can feed more than 20 people? I have the perfect recipe, Halloween Funfetti Cake Balls.   This recipe is easy to put together, and is versatile! You can literally swap the sprinkles used and tailor it to any event’s theme.

Ingredients 

1 1/2 C of funfetti (or confetti if this is what your local store has) cake mix
1/2 – 1 C unsalted sweet cream butter, softened (maybe microwave 20-30 seconds)
1/4 C sugar (anything more is too sweet)
1/2 C flour
1/2 C + more for decoration halloween confetti sprinkles
1 – 2 Bags of white melting chocolate ( I only used 1 for 12 cakeballs)
1 Cookie sheet fitted with wax, or parchment paper
*If you are making this  recipe for more than 12 people, simply double the recipe.

Directions

In a large mixing bowl, add the cake mix, sugar, flour and vanilla
Cut the butter into cubes and add into the same bowl
using a fork or your fingers, work the mixture into a cookie dough texture
Add the halloween sprinkles and mix until combined
Using a small ice cream scooper, scoop some dough and using your hands, roll into balls
repeat steps until all dough is gone
Using a double boiler, melt the white chocolate (read here if you don’t know how to use one)
Dip the dough ball into the chocolate
Using a fork, completely coat the ball into the chocolate and place onto the cookie sheet
repeat the previous step with the remaining dough balls
sprinkle some sprinkles onto the tops of the balls and place into the fridge for 15 minutes
